- Brewed 3 April 2010. Extract OG: 1.053. AG OG: 1.056
(74% efficiency). The intent was to do "identical" batches,
one extract & one AG, to compare & contrast. Once
fermentation was well underway at room temp, I began
slowly bringing the temp down to 50F. At start: Extract is
strikingly darker than AG, about 10-15L.
- Racked 17 April 2010. AG is still lighter, has ~2x the
sediment. Malty. Extract is dryer, hoppier, has a taste that
must be the dreaded Extract "twang." Diacetyl rest started.
- 20 April: cold crash to 32F.
- 10 June: Bottled. AG is still far and away the better of the
two.
Notes:
- Extract: Heat 3.5 gallons of water. Add extracts, stir to dissolve.
- AG: Add 6 quarts boiling water. Hold 175F for 15 minutes.
- AG: Strike with 10 quarts of 165F water. Hold 155F for 45 minutes.
- Extract: Boil 1 hour, hopping as indicated.
- AG: Sparge to 3.5 gallons; boil 1 hour, hopping as indicated.
